The cork ritual in the cellar

At Taverna Del Sole, within the ancient tuff walls of Palazzo Savini in Acquapendente, every celebration becomes a legend. Among the most beloved traditions is one that has become the symbol of the house: the famous "Cork Ritual"

Whenever a guest celebrates an occasion—be it a birthday, anniversary, graduation, or simply a special evening—there's one moment that can't be missed: the bottle to be uncorked.

But it doesn't end there. After the toast, the cork is never thrown away. There's a simple yet powerful rule:
the cork must be tossed into the Taverna's cellar, through an opening visible in the main room that looks directly onto the venue's ancient foundations.

It's a symbolic gesture, a way to "seal" that joyful moment within the stones of history. Once the cork falls there, it remains forever, as if to say: "I was here, I lived this joy, and I left it behind."

Over time, the cellar has filled with hundreds of corks, each with its own story, its own toast, its own memory.

Anyone who visits Taverna Del Sole today can feel this spirit in the air: every cork tells a small celebration, a piece of life.
And so, the Taverna is more than just a restaurant: it's a place where emotions stay.
One cork at a time.
