But it doesn't end there. After the toast, the cork is never thrown away. There's a simple yet powerful rule:
the cork must be tossed into the Taverna's cellar, through an opening visible in the main room that looks directly onto the venue's ancient foundations.

It's a symbolic gesture, a way to "seal" that joyful moment within the stones of history. Once the cork falls there, it remains forever, as if to say: "I was here, I lived this joy, and I left it behind."
